Ingredients:
RICE NOODLES
salt (optional)
150 grams rice noodles (or any kind of noodles)
PEANUT BUTTER SAUCE
2 small cloves of garlic
1 tablespoon light soy sauce
4 tablespoons peanut butter (crunchy or creamy, you choose)
1/2 tablespoon lemon juice
1/2 tablespoon sesame oil (optional but highly recommended)
1 tablespoon honey (or maple syrup or 1/2 tbsp sugar)
5 tablespoons water
1 tablespoon sriracha (or any spicy sauce) – use only 1/2 tablespoon if you don’t want it very spicy
OPTIONAL TOPPINGS
crushed peanuts
sesame seeds
spring onions
Directions:
Refer to the directions provided on the package of the rice noodles on how to cook them. Drain and set aside.
In a blender, add all the ingredients for the sauce. Pulse until well blended and the texture becomes smooth.
Pour the sauce on top of the cooked noodles, then toss until well coated.
Serve immediately and enjoy!
Note:
Garnish with sesame seeds on top.
