This recipe was given to me by my dear sister. Oh, man, I am so glad that I gave it a try because I never would have tasted perfection! You will surely love every bite of this heavenly treat! This is a vegetarian recipe but feel free to tweak it to your liking. I am sure that you can do a lot to this very easy recipe. Ingredients:
1 tortilla
1 tablespoon tomato paste
1 tablespoon cream cheese
1 garlic clove, minced
2 cherry tomatoes, chopped
2 tablespoons arugula and parsley, chopped
1 tablespoon olives, pitted and chopped
1/2 c fresh mozzarella (diced or shredded) or other cheese
Directions:
Step 1: Spread the tortilla with cream cheese, tomato paste, and garlic.
Step 2: Top with olives, 1/2 of tomatoes, parsley, arugula, and mozzarella cheese.
Step 3: Fold the tortilla in half.
Step 4: Place a non-stick pan on the stove and turn the heat to medium-high.
Step 5: Add the tortilla and toast until golden brown.
Step 6: Place the tortilla onto a clean serving plate.
Step 7: Slice the tortilla into three servings.
Step 8: Serve hot and enjoy!
Notes:
1. Feel free to use your preferred green ingredients for this recipe.
2. You can use your preferred type of cheese as well.
3. My only advice to you is to be very generous with the amount of cheese that you are going to add!
