Ingredients:
1 small red onion, sliced
2 tbsp crushed tomato
1 pound (450g) penne pasta
1 package Italian sausage, 5 or 6 sausages total
4 cloves garlic, minced
4 large ripe tomatoes, diced
1 red bell pepper, sliced
1/2 c (125ml) vegetable or chicken broth
2 tsp fennel seeds, crushed in a mortar
1/2 tsp crushed chilli pepper
Fresh chopped basil, for garnish
1 scallion, sliced, for garnish
Salt and fresh cracked pepper to taste
1 tsp Italian seasoning
Directions:
1. Bring salted water in a large pot over high heat.
2. Add the pasta and cook until firm to bite. Drain and rinse with cold water to stop the cooking process. Set aside.
3. Place a large skillet on the stove and turn the heat to medium.
4. Add oil and let it sizzle.
5. Add a bit of water and the sausage. Cook until brown.
6. Remove the browned sausage from the skillet onto a chopping board. Slice into 1/2-inch cuts.
7. Empty the skillet, then add 1 tbsp of oil and let it sizzle again.
8. Add the onions, Italian seasoning, crushed chilli pepper flakes, and crushed fennel seeds. sauté until soft and aromatic.
9. Add the garlic and tomato, then sauté until aromatic and soft.
10. Add the bell pepper and tomato slices, then cook for a few more minutes until tender.
11. Pour in the broth and stir until well blended. Sprinkle salt and pepper to season.
12. Bring the sausage slices back to the skillet as well as the rest of the ingredients. Stir until well combined. Cook everything for another 5 to 10 minutes.
13. Toss in the cooked noodles until well coated by the ingredients in the skillet.
14. Remove the skillet from the stove, then sprinkle freshly chopped basil, scallions, and Parmesan cheese on top of the sausage pasta.
15. Serve immediately and enjoy!
