Ingredients:
1 pound (450g) penne pasta
1 red bell pepper, sliced
4 cloves garlic, minced
4 large ripe tomatoes, diced
1 package Italian sausage, 5 or 6 sausages total
1/2 c (125ml) vegetable or chicken broth
1 small red onion, sliced
1 tsp Italian seasoning
2 tbsp crushed tomato
2 tsp fennel seeds, crushed in a mortar
Salt and fresh cracked pepper to taste
1/2 tsp crushed chilli pepper
Fresh chopped basil, for garnish
1 scallion, sliced, for garnish
Directions:
1. Place a large pot with slightly salted water on the stove and turn the heat to high. Allow the water to boil.
2. Add the pasta and cook until firm to bite. Drain and rinse with cold water to stop the cooking process.
3. Place a large skillet on the stove and turn the heat to medium.
4. Add oil and allow it to become hot.
5. Add the sausage and cook until brown. Add a bit of water.
6. Remove the sausage from the skillet onto a chopping board. Slice into 1/2-inch pieces.
7. Empty the skillet, then add 1 tbsp of oil and allow it to become hot.
8. Add the onions, crushed chilli pepper flakes, Italian seasoning, and crushed fennel seeds. sauté until soft.
9. Add the garlic and tomato, then sauté until aromatic and soft.
10. Add the bell pepper and tomato slices, then cook for a few more minutes until soft.
11. Add the broth and stir until well blended. Sprinkle salt and pepper to taste.
12. Put the sausage slices back to the skillet as well as the rest of the ingredients. Stir until well mixed and cook for another 5 to 10 minutes.
13. Add the cooked pasta and toss until well coated by all the ingredients.
14. Remove from the heat, then sprinkle freshly chopped basil, scallions, and Parmesan cheese on top.
15. Serve and enjoy!
