I will never get tired of recommending this recipe to my friends and loved ones! Everyone should taste how delicious these treats are! With this very minimal set of ingredients, you will surely have the best meal today! My only advice to you is to be very generous with the amount of cheese that you are going to add. 1 (8 oz) package cream cheese, softened
3 c salsa, divided
4 green onions, chopped, divided
2 ½ c Cheddar cheese, divided
2 ½ c shredded Monterey Jack cheese, divided
12 (8 inches) flour tortillas
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a mixing bowl, add the green onions, cream cheese, and 2 cups of salsa. Stir until well mixed.
Add 2 cups of Monterey Jack cheese and shredded cheddar cheese. Stir until well mixed.
Line each tortilla in the middle with 1/2 cup of the cheese filling. Roll each.
Repeat the process with the rest of the ingredients.
Arrange the rolls into a 9×13-inch baking dish.
Top the enchiladas with the rest of the salsa and spread it evenly.
In a mixing bowl, add the rest of the cheeses. Stir until well mixed.
Sprinkle the cheese mixture and green onions on top of the salsa.
Cover everything with foil.
Place it inside the preheated oven and bake for 20 minutes or until the cheese turns golden brown.
Remove from the oven and allow it to cool completely at room temperature.
Serve warm and enjoy!
