Five ingredients to make your day complete. Yes, five ingredients that I know you already have! A big thanks to my dear friend, Louise, for recommending this recipe. I am so impressed! I never thought that it would taste this good. Well, you just have to give it a try and taste it yourself. I have listed all the things you will be needing so you just have to follow them for they will guide you to perfection. Enjoy!
Ingredients:
3 cloves garlic, minced
1 14 oz. can full fat coconut milk
1/4 c vodka
1/4 c olive oil
1 lb. rotini (or any pasta, but rotini is fun)
1 6 oz. can tomato paste
1 tsp salt
season to taste with more salt, black pepper, olive oil, red pepper flakes, garlic salt, etc.
a little bit of reserved pasta water
Directions:
1. Place a skillet on the stove and turn the heat to low.
2. Add olive oil and allow it to become hot.
3. Add the garlic and sauté for about a minute or until aromatic.
4. Stir and cook the tomato paste for about a minute.
5. Pour in the vodka and coconut milk. Season with salt and simmer for a few minutes.
6. Refer to the directions provided on the package of the pasta on how to cook it. Drain and add it into the skillet with the sauce.
7. Toss everything until the pasta is well coated by the delicious sauce. Add more of the pasta water if the texture is too dry.
8. Transfer onto serving plates and garnish with your preferred herbs.
9. Serve and enjoy!
Notes:
Make sure not to overcook the garlic. It will get a bitter taste to the dish and we don’t want that.
I also used whole wheat pasta for this recipe.
Feel free to add more vodka if you prefer
