Ingredients:
1 can of black beans (drained & rinsed)
1 can of pinto beans (drained & rinsed)
1 can petite diced tomatoes (undrained)
1 can sweet corn (drained)
1 can (12.5 ounces) chicken breast (drained & flaked)
1 can (10 ounces) green enchilada sauce
1 can (14 ounces) low-sodium chicken broth
1 packet taco seasoning
1/2 tsp cumin
1/2 tsp chilli powder
1/2 tsp garlic powder
Directions:
1. In a large pot, add all the ingredients. Stir until well mixed.
2. Place the pot on the stove and turn the heat to medium-high.
3. Allow the mixture to boil, then turn the heat down to low. Simmer everything for another 15 minutes. Make sure to stir from time to time.
4. Spoon into serving bowls.
5. Garnish each serving with shredded cheese, tortilla chips, avocado, and sour cream.
6. Serve and enjoy!
Notes:
Feel free to add more shredded chicken to this recipe.
You can also use your preferred brand of taco seasoning.
