Ingredients:
2 tbsp olive oil
1 c Panko crumbs
1/2 c buttermilk
1 large yellow or sweet onion, sliced and separated into rings
1/2 c all-purpose flour
olive oil spray
1 tsp paprika
1 Egg
1 tsp salt, divided
Directions:
1. In a small mixing bowl, add ½ teaspoon of salt, flour, and paprika. Whisk until well blended.
2. In a separate mixing bowl, add the egg and buttermilk. Beat until well blended.
3. Add ¼ cup of the flour mixture into the bowl with the buttermilk mixture, then beat until well blended.
4. In another mixing bowl, add 2 tablespoons of oil, Panko crumbs, and ½ teaspoon of salt. Stir until well blended.
5. Coat each onion ring with the flour mixture, into the buttermilk mixture, then into the Panko crumb mixture. Shake off any excess. Repeat the process to the rest of the onion rings.
6. Lay the coated onion rings into the Air Fryer. Make sure not to overcrowd the onion rings. It is best to cook them in batches.
7. Turn the Air Fryer to about 200 degrees C or 400 degrees F and cook them for 12 minutes. Turn the onion rings in the middle of the cooking time to cook the other sides.
8. Serve and enjoy!
