Ingredients:
Cooking spray
1 ¼ c white sugar
⅔ c of oil
3 Eggs
1 tbsp vanilla extract
2 ¼ c all-purpose flour
1 ½ tbsp ground cinnamon, or more to taste
¾ tsp baking soda
¾ tsp baking powder
2 c shredded zucchini
1 c shredded apple
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in 24 muffin cups. You can also line them with paper liners.
3. In a mixing bowl, add the eggs, sugar, vanilla extract, and oil. Whisk until well blended.
4. Add cinnamon, flour, baking powder, and baking soda. Stir until well combined.
5. Add the apple and zucchini, then toss until well combined.
6. Fill each muffin cup with the batter.
7. Place them inside the preheated oven and bake for about 25 minutes or until a toothpick comes out clean after inserting it in the middle.
8. Remove from the oven and allow the muffins to cool at room temperature.
9. Serve and enjoy!
Note:
Use an ice cream scoop for an even amount.
