PECANS HORTBREA D CRUST:
1 c all-purpose our
1/2 c butter
1/4 c brown sugar
3/4 c pecans, chopped
CREAM CHEESE LAYER
6 oz cream cheese, softened
1/2 c powdered sugar
2 tbsp heavy cream
1 c sugar
1/3 c cocoa powder
3 tbsp cornstarch
2 tbsp all-purpose our
Pinch of salt
3 Egg yolks
2 c whole milk
2 tbsp butter
1 tsp vanilla
WHIPPED CREAM TOPPING:
1/2 c heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla
1-2 tbsp chopped pecans
To Make the Crust:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Combine the melted butter, brown sugar, flour, and pecans.
Step 3: Bake the flour mixture inside the preheated oven for 15 minutes or until brown.
Step 4: Remove from the oven and let it sit at room temperature to cool.
To Make the Cream Cheese Filling:
Step 1: In a medium mixing bowl, add in the heavy cream, powdered sugar, and cream cheese. Beat until well combined, then spread it evenly on the bottom of the pie crust.
To Make the Chocolate Layer:
Step 1: In a medium saucepan, add in the flour, cornstarch, cocoa powder, salt, and sugar. Whisk until well mixed.
Step 2: In another mixing bowl, add in the milk and egg yolks. Whisk until well mixed, and then transfer the mixture into the cocoa powder mixture. Whisk until well combined.
Step 3: Place the saucepan on the stove and turn the heat to medium. Whisk and cook for 7 to 10 minutes or until thick.
Step 4: Remove the saucepan from the heat and add in vanilla and butter. Stir until well mixed and melted.
Step 5: Place the chocolate pudding in a shallow bowl. Cover the bowl with plastic wrap and place it inside the fridge to cool for 30 minutes.
Step 6: Remove the plastic wrap and stir. Spread the chocolate pudding on top of the cream cheese layer, then cover it with plastic wrap once again. Place it inside the fridge to chill for at least 4 hours.
To Make the Whipped Topping:
Step 1: Combine heavy cream and powdered sugar.
Step 2: Spread the whipped cream over the chocolate pudding and sprinkle chopped pecans as well as chocolate shavings on top.
Step 3: Serve and enjoy!
