3/4 c lukewarm water approximately 110°F
1/4 c superfine sugar
1 1/2 teaspoons active dry yeast
1 Egg beaten
1/2 c buttermilk
3 tablespoons butter melted
1/2 teaspoon salt
2 teaspoon vanilla extract
3 3/4 c flour more as needed
1/8 c milk
1 tablespoon butter melted for brushing
1/4 c powdered sugar for dusting
Step 1: Combine water, yeast, and sugar in a large mixing bowl.
Step 2: Let the yeast sit for 10 minutes or until the surface becomes a little foamy.
Step 3: Prepare the oven and preheat to 200 degrees F.
Step 4: Line with parchment paper three baking sheets.
Step 5: In the same bowl with the yeast, add buttermilk, eggs, vanilla, 3 tablespoons of butter, and salt. Whisk until well mixed.
Step 6: Add in the flour gradually and stir every addition.
Step 7: Add more flour if needed.
Step 8: Knead the dough on medium speed for about 5 minutes.
Step 9: Apply cooking spray in a mixing bowl.
Step 10: Transfer the dough into the prepared bowl.
Step 11: Place the bowl inside the preheated oven and turn off the heat. Allow the bowl to sit inside for about 15 minutes to rise. Make sure to cover with a towel the bowl.
Step 12: Remove the bowl from the oven and preheat the oven again to 200 degrees F.
Step 13: Roll out the dough on a flat surface to about ¼-inch thick.
Step 14: Transfer the dough onto the lined baking sheets.
Step 15 Place the baking sheets inside the oven and turn off the heat. Allow the dough to rise for about 30 minutes. Make sure to cover the sheets with plastic wrap.
Step 16: Remove from the oven and preheat the oven again for 350 degrees F.
Step 17: Brush the tops of the dough with milk.
Step 18: Bake each beignet for 10 minutes or until golden brown.
Step 19: Remove from the oven and allow them to cool for 5 minutes.
Step 20: Brush with melted butter the tops of each beignet and sprinkle powdered sugar as well.
Step 21: Serve warm and enjoy!
