3 medium Zucchini (sliced in 1/4″ thick slices)
1 1/2 c Swiss Gruyere shredded cheese blend (or any shredded sharp cheese; divided)
3 oz Brie cheese (edges cut off)
1/3 c Heavy cream
2 tablespoons unsweetened almond milk (or any milk of choice)
1 tablespoon butter
2 cloves Garlic (minced or crushed)
1/2 tablespoon Italian seasoning
Step 1: In a medium mixing bowl, add the zucchini slices and salt. Toss until well combined.
Step 2: Transfer into a colander and let it sit on the sink for about 45 minutes to drain the liquid.
Step 3: Use paper towels to pat dry the zucchini slices.
Step 4: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 5: Place the zucchini slices in a small casserole dish and arrange them in overlapping rows.
Step 6: Sprinkle shredded cheese in the middle of each row and season with pepper.
Step 7: In a small saucepan, add the Brie cheese, milk, garlic, butter, and cream. Stir until well mixed.
Step 8: Place the saucepan on the stove and turn the heat to low. Cook the mixture until the cheese has melted and the texture becomes smooth.
Step 9: Pour the mixture over the zucchini in the casserole dish.
Step 10: Sprinkle the rest of the shredded cheese and Italian seasoning on top.
Step 11: Place the casserole dish inside the preheated oven and bake for 30 minutes or until the zucchinis are translucent and the cheese turns golden brown.
Step 12: Remove from the oven and allow it to cool at room temperature.
Step 13: Serve and enjoy!
