Oh, my! I love these heavenly treats! Every bite of this baked potato is just too perfect. My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Have a wonderful day, friends. Enjoy!
Ingredients:
1 tbsp vegetable oil, Canola, or Olive Oil
6 slices bacon, uncooked
3 russet potatoes, Scrubbed clean
2.5 c cheddar cheese, shredded
2 green onions, diced
1 tbsp Italian Seasoning
Salt/Pepper, to taste
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Let the bacon rest for a few minutes at room temperature.
3. Slice into about 3/4-inch slices the potatoes.
4. Brush each potato slice with oil, then season with salt and pepper. Make sure to coat each well.
5. Arrange the potato slices onto a baking sheet.
6. Place them inside the preheated oven and bake for about 25 minutes or until fork-tender and crispy.
7. Meanwhile, place a small skillet on the stove and turn the heat to low.
8. Add the bacon, then cook until crispy and brown. Remove the bacon from the skillet onto a clean plate. Reserve the bacon grease.
9. Remove the potatoes from the oven, then brush the top and bottom with the bacon grease.
10. Put them back inside the oven and bake for another 10 minutes.
11. Reduce the heat to about 175 degrees C or 350 degrees F, then sprinkle a generous amount of cheese over the potatoes and crumble the bacon as well.
12. Bake for another 5 minutes or until the cheese has melted completely.
13. Remove from the oven and garnish Italian seasoning and green onions.
14. Serve and enjoy!
Notes:
I always serve these potato slices with sour cream.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 to 4 days.
