Ingredients:
3 cloves garlic, minced
1 tbsp ginger, minced
1/2 can coconut milk, 7 ounces
2 tbsp soy sauce, low-sodium
2 tbsp honey
1 tbsp rice wine vinegar
5 chicken thighs, boneless, skinless
1/2 tsp sesame oil
1/3 c creamy peanut butter
cilantro, for garnish
1 tbsp lime juice
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Add coconut milk, chicken, soy sauce, peanut butter, sesame oil, garlic, red wine vinegar, honey, ginger, and lime juice into a large mixing bowl. Stir until well combined.
3. Add the chicken to the prepared baking dish and arrange them in a single layer.
4. Add the sauce over the chicken and spread it evenly.
5. Place the baking dish in the preheated oven and bake the chicken for about 30 to 35 minutes or until done.
6. Remove the chicken from the oven and allow them to rest for a few minutes at room temperature.
