Banana-Cinnamon Muffins

Prep Time: 20 mins | Total Time: 45 mins | Yield: 12 Servings

These heavenly treats are so good! You have got to bite your teeth into these muffins! Enjoy!

Ingredients:

Muffins

2/3 c sugar
1/2 c vegetable oil
2 Eggs
2/3 c mashed very ripe bananas (2 small)
1 tsp vanilla
1 2/3 c Gold Medal™ all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon

Topping

1/4 c sugar
1/2 tsp ground cinnamon
1/4 c butter, melted

Directions:

Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Step 2: Apply cooking spray in 12-muffin cups.

Step 3: Add eggs, oil, and 2/3 cup of sugar into a medium mixing bowl. Whisk until well combined.

Step 4: Add vanilla and bananas. Stir until well mixed.

Step 5: Add the rest of the muffin ingredients and stir until well mixed.

Step 6: Fill the 12-muffin cups with the batter.

Step 7: Place inside the preheated oven and bake for 20 minutes or until a toothpick comes out clean after inserting it in the middle.

Step 8: Remove from the oven and allow the muffins to cool at room temperature.

Step 9: In a small mixing bowl, add 1/2 tsp of cinnamon and 1/4 cup of sugar. Stir until well mixed.

Step 10: Dip each muffin into the melted butter, followed by the sugar mixture. Repeat to the rest of the muffins.

Step 11: Serve and enjoy!
