This recipe has always been a part of my family since I was a little kid. This was my Grandma’s recipe that she gave to me. I am so grateful to her for a lot of things and this one is just one of them! Oh, man, you should have seen her worked around the kitchen. She was a wizard! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! By the way, feel free to add more ingredients if you prefer. Ingredients:
5 c chopped cauliflower florets
2 eggs
½ c all-purpose flour
½ teaspoon baking powder
salt and pepper to taste
vegetable oil for frying
Directions:
1. In a food processor, add cauliflower. Pulse until well minced.
2. Move the minced cauliflower into a large mixing bowl.
3. In the same bowl with the cauliflower, add the eggs, all-purpose flour, baking powder, salt, and pepper. Stir until well combined.
4. Add more flour if the texture is too soft.
5. Scoop the mixture to make small balls. I make about 1/3-inch balls.
6. Place a pan on the stove and turn the heat to medium.
7. Add the vegetable oil and allow it to become hot.
8. Add the and patties and gently press them with a spatula to flatten. Cook each side for about 2 minutes or until they turn golden brown.
9. Remove from the pan onto a clean plate lined with paper towels to drain any excess oil.
10. Serve warm with your preferred sauce. Enjoy!
