Ingredients:
1 lb. small pasta shells
1 c mayonnaise
15 oz. can of black beans rinsed and drained
2 tbsp vegetable oil
1/2 jalapeno peppers de-seeded, deveined and minced
1 red bell pepper seeded and diced
2 boneless, skinless chicken breast halves
1 c BBQ sauce
1 red onion chopped
1 orange bell pepper seeded and diced
1/4 c minced fresh cilantro
1 c corn
1/2 tsp kosher salt
1/4 tsp coarse ground pepper
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add vegetable oil and allow it to become hot.
Sprinkle a bit of salt and pepper over the chicken, then rub each until well coated.
Add the chicken slices into the hot skillet, then cook each side for about 6 minutes or until they turn brown.
Transfer the chicken pieces onto a clean plate.
Add the jalapenos and onions into the empty skillet, then sauté until translucent and soft.
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
In a mixing bowl, add mayonnaise, BBQ sauce, salt, and pepper. Stir until well blended.
Slice the chicken into small pieces, then add them into the bowl with the dressing.
Add the jalapenos, bell peppers, onions, cilantro, corn, and black beans. Toss everything until well combined.
Serve and enjoy!
