Ingredients:
2 tbsp olive oil
4 lbs. boneless pork shoulder, cut into 2-inch pieces
For the Dry Rub
1 tsp onion powder
1 tbsp brown sugar
1 1/2 tsp cumin
2 tsp garlic powder
2 tsp sea salt
1 tbsp paprika (not smoked)
2 tsp chilli powder
1/2 tsp ground black pepper
1 tsp dry mustard
1/4 tsp cayenne pepper
For the Sauce
1/4 c brown sugar
1/2 c chicken broth (I use low sodium)
1 c BBQ sauce (store-bought)
2 tbsp Worcestershire sauce
1 c ketchup
Directions:
1. Add all the ingredients for the dry rub into a mixing bowl. Whisk until well mixed.
2. In another mixing bowl, add all the ingredients for the sauce. Stir until well blended.
3. Rub each pork with dry ingredients. Make sure to coat them well.
4. Press the “Sauté” button on the Instant Pot.
5. Add oil and let it become hot.
6. Add the pork in batches and sear each side for 5 minutes or until they turn brown. Remove from the pot onto a clean plate. Repeat the process with the rest of the meat.
7. Press the “Cancel” button on the Instant Pot, then add the sauce. Scrape the bottom of the pot to get the browned bits.
8. Put the meat back into the pot and toss until well coated by the delicious sauce.
9. Seal the pot and press the “Stew” button, then cook for about 1 hour 30 minutes.
10. Do a natural release, then remove the lid.
11. Remove the pork from the pot into a mixing bowl.
12. Press the “Sauté” button again and let the sauce simmer for a few minutes.
13. Use two forks to shred the pork into small pieces.
14. Put the shredded meat back into the Instant Pot and toss until well coated by the sauce.
15. Serve and enjoy!
