Ingredients:
500g (1 pound) ground beef (minced), lean
2 garlic cloves, minced
2 tablespoons olive oil
1 red capsicum/bell pepper, diced (large)
2 1/2 tablespoons tomato paste
1 onion, diced (any type)
1/4 teaspoon cayenne pepper (optional)
1 teaspoon each onion powder, dried oregano (or another herb of choice)
1 dried bay leaf
2 c (500 ml) beef broth, low sodium
3 big handfuls of baby spinach (~ 90g/3 ounces), or other leafy greens
2 c (300g) diced frozen veggies, I used corn, pea, carrot mix
1 1/4 c (225g) long-grain white rice, uncooked
1 1/4 teaspoons salt
1/2 teaspoon EACH cumin, black pepper
Directions:
1. Place a large pot on the stove and turn the heat to high.
2. Add oil and allow it to become hot.
3. Add the garlic, onion, and capsicum, then sauté for about a minute.
4. Add the beef, then cook until crumbly and brown.
5. Add the onion powder, oregano, tomato paste, cayenne pepper, cumin, salt, and pepper. Stir until well blended and cook for about a minute.
6. Reduce the heat to medium, then add the beef broth and rice. Stir until well combined.
7. Add bay leaf and frozen vegetables. Stir again until well mixed.
8. Cover the pot with the lid, then reduce the heat to medium-low. Simmer for about 13 to 15 minutes or until rice is cooked.
9. Remove the pot from the heat, then add the spinach over the rice. Cover the pot and leave it for about 10 minutes.
10. Use a fork to fluff and mix the wilted spinach with the cooked rice. Add more seasonings if needed.
11. Serve and enjoy!
