These Beef Enchiladas will surely make your day extra special! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Feel free to tweak it a bit to your liking. Enjoy!
Ingredients:
Enchilada Sauce:
1 yellow onion chopped
3 garlic cloves minced or pressed
2 tablespoons canola oil
14.5 ounces can tomato slices
3 garlic cloves minced or pressed
1 c beef stock
1/2 teaspoon chilli powder
3 garlic cloves minced or pressed
2 teaspoons garlic powder
2 tablespoons all-purpose flour
2 teaspoons cumin
1 chipotle pepper in adobo sauce
2 teaspoons white granulated sugar
2 teaspoons paprika
1 teaspoon dried oregano
1 teaspoon salt more or less to taste
Beef Filling:
1.5 pounds ground beef
4 large garlic cloves
1 yellow onion
2 red bell peppers
2 tomatoes on a vine
1 teaspoon chilli powder
1 teaspoon cumin
1 teaspoon chilli powder
salt
1 1/2 teaspoon paprika
1 1/2 teaspoon garlic powder
Enchiladas:
8 ounces shredded Mexican cheese mix
6 medium soft taco flour tortillas
Directions:
For the Enchilada Sauce:
1. Place pot on the stove and turn the heat to medium.
2. Add oil and allow it to become hot.
3. Add the onion and sauté until translucent.
4. Add garlic and sauté until aromatic.
5. Sprinkle flour, then whisk and cook for a minute.
6. Add the stock and stir until well mixed.
7. Add the rest of the ingredients and stir again until well blended. Allow the mixture to simmer.
8. Transfer everything into a food processor, then pulse until well blended.
For the Filling:
1. Place a large pan on the stove and turn the heat to medium.
2. Add oil and allow it to become hot.
3. Add the onion and pepper slices, then sauté until soft.
4. Add garlic, tomatoes, salt, and chilli powder. Sauté for a few more minutes. Remove everything from the pan onto a clean plate
5. Add the ground beef into the same pan, then cook until crumbly and brown.
6. Add oregano, cumin, garlic powder, salt, and chilli powder. Stir until well mixed.
7. Put the sauteed veggies back into the pan and toss until well combined. Remove from the stove.
For the Beef Enchiladas:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Apply cooking spray in a 9×13-inch casserole dish. Add enchilada sauce and spread it evenly.
3. Add beef filling and shredded cheese to each tortilla, then roll it.
4. Arrange the beef enchiladas into the prepared casserole dish over the sauce.
5. Add the rest of the sauce on top of each tortilla and spread it evenly.
6. Sprinkle a generous amount of shredded cheese all over the tortillas.
7. Place them inside the preheated oven and bake for about 20 minutes or until the cheese is melted completely.
8. Remove from the oven and allow them to cool for a few minutes.
9. Serve and enjoy!
