Ingredients:
2 tbsp olive oil
1 onion chopped
2 lbs cubed chuck or stew meat
10 ½ oz beef broth
10 ½ oz French onion soup
1 tbsp Worcestershire sauce
1 bay leaf
salt & pepper to taste
To Thicken Gravy:
3 tbsp cornstarch
1/3 c water
Directions:
Step 1: Place a large pot on the stove and turn the heat to medium-high.
Step 2: Add 1 tablespoon of olive oil and allow it to become hot.
Step 3: Season with salt and pepper the beef.
Step 4: Add the seasoned beef into the pot and cook until brown.
Step 5: Remove the beef from the pot and place them on a clean plate.
Step 6: Reduce the heat to medium and add the rest of the oil, then allow it to become hot.
Step 7: Add the onion and sauté until translucent.
Step 8: Add the soup, beef, broth, bay leaf, and Worcestershire sauce. Stir until just mixed, then allow the mixture to boil.
Step 9: Turn the heat down to low and cover the pot. Simmer for 2 hours or until the beef is soft.
Step 10: In a small mixing bowl, add 1/3 cup of cold water and cornstarch. Whisk until well mixed.
Step 11: Pour the dissolved cornstarch into the pot and stir until the texture is thick to your preference.
Step 12: Add more salt and pepper if needed, then remove the bay leaf.
Step 13: Serve hot over mashed potatoes. Enjoy!
