Ingredients:
juice of ½ lemon
2 tsp honey
2 tsp minced garlic
1 ½-2 lb. pork tenderloin
¼ c oil
⅛ tsp cracked black pepper – or a pinch of finely ground black pepper
½ tsp salt
1 tsp Italian herb seasoning blend – or ¼ tsp each dried basil, thyme, oregano, and parsley or rosemary
2 tsp Dijon mustard
Directions:
To Marinate the Pork:
1. Use paper towels to pat dry the pork tenderloin.
2. In a mixing bowl, add garlic, Dijon mustard, oil, salt, pepper, dried herbs, lemon juice, and honey. Stir until well blended.
3. Add 1/2 of the marinade inside a large resealable bag and set aside the other half for grilling.
4. Add the tenderloins inside the bag with the marinade. Seal the bag and shake it until the meat is well coated.
5. Place the bag inside the fridge and marinate the tenderloins for 30 minutes.
To Grill:
1. Prepare the grill and preheat to medium.
2. Brush the grill with oil.
3. Place the pork tenderloins over the grill, then cook all sides for about 15 to 20 minutes. Make sure to flip them from time to time to evenly cook all sides.
4. Brush the pork with the reserved marinade a few times for more flavors.
5. Lay the pork tenderloins onto a chopping board and allow them to rest for a few minutes to incorporate all the flavors. Slice the tenderloins into even pieces.
6. Serve and enjoy!
