Ingredients:
8 oz linguine (gluten-free for gluten-free)
4 slices bacon, cut into 1-inch pieces
1 tbsp oil
2 tbsp butter
1/2 lb boneless and skinless chicken breasts, pounded thin
4 cloves garlic, chopped
1/4 c chicken broth
1 c heavy/whipping cream
1 c Parmigiano Reggiano (parmesan), grated
salt and pepper to taste
2 c broccoli florets, cooked
1 tbsp parsley, chopped (optional)
Directions:
Step 1: Refer to the directions provided on the package of linguine on how to cook it. Drain and set aside.
Step 2: Place a large pan on the stove and turn the heat to medium.
Step 3: Add bacon and cook until greasy and brown. Transfer the bacon onto a plate lined with paper towels to drain any excess oil.
Step 4: In the same pan with the bacon grease, add butter and allow it to melt.
Step 5: Add the chicken and cook each side for about 5 minutes or until brown.
Step 6: Remove the chicken breasts from the pan. Cool and slice into small pieces.
Step 7: In the same pan, add the garlic and sauté until aromatic.
Step 8: Add the chicken broth and scrape the bottom of the pan to get the brown bits.
Step 9: Add the cheese and cream. Stir until well blended, then allow the mixture to simmer until thick. Season with salt and pepper.
Step 10: Remove the pan from the heat.
Step 11: Add the cooked pasta, chicken, bacon, parsley, and broccoli. Toss until well combined.
Step 12: Serve and enjoy!
