I am so glad that I gave it a try because I never would have tasted perfection! Oh, man, you are so in for a treat! As awesome as this recipe is, feel free to add more ingredients and tweak it to your liking. These broccoli Cheese Bites will restore your faith in vegetables if you are not a huge fan of them. My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Ingredients:
2 c broccoli, cooked and chopped
1 c cheddar cheese
12 Ritz crackers, crumbled
1 Egg
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in a muffin tin.
3. Place a pot with water on the stove and turn the heat to high. Allow the water to boil.
4. Add the broccoli and cook for a few minutes. Drain and rinse with cold water to stop the cooking process.
5. In a food processor, add the cooked broccoli, Ritz crackers, and egg. Pulse until well mixed.
6. Fill the muffin tin with the mixture.
7. Sprinkle Ritz crackers over.
8. Place it inside the preheated oven and bake for about 15 minutes or until the top turns golden brown.
9. Remove from the oven and allow it to cool at room temperature.
10. Serve warm and enjoy!
