Ingredients:
2 c cooked white rice
6 c fresh broccoli cut into bite-sized pieces
SAUCE
2 c milk
3 tbsp butter
3 tbsp flour
½ tsp paprika
¾ c onion diced (about 1 small)
2 c shredded cheddar cheese divided
½ tsp dry mustard powder
3 tbsp cream cheese
salt to taste
¼ tsp each garlic & black pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a pan on the stove and turn the heat to medium-low.
Add butter and allow it to melt.
Add the onion and sauté until soft.
Add flour, pepper, and garlic powder. Stir and cook for about a minute or two.
Add the milk and whisk continuously until well blended.
Allow the mixture to simmer for a few minutes until the texture becomes thick.
Remove the pan from the stove, then add the cream cheese, 1 1/2 cups of cheddar cheese, dry mustard, and paprika. Stir until well blended.
Blanch the broccoli in boiling water for 2 minutes or less.
In a large mixing bowl, add the broccoli, rice, and cheese sauce. Stir everything until well mixed.
Apply cooking spray in a 2-quart casserole dish.
Transfer the mixture into the prepared casserole dish and spread it evenly.
Place it inside the preheated oven and bake for about 35 minutes or until the cheese turns golden brown.
Remove from the oven and let it rest for a few minutes at room temperature.
Serve warm and enjoy!
