The rich tomato flavour of this incredible dish is superb! I love how the tomatoes made the chicken infused with delicious flavours! You have got to give it a try to taste it yourself! Oh, man, you are so in for a treat. Enjoy!
For the Chicken:
4 chicken breasts, about 6 ounces each
2 tbsp olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp salt
3/4 c shredded mozzarella
For the Bruschetta:
1 ½ c cherry tomatoes, halved
3 cloves garlic, minced
½ small red onion, chopped
1 tsp balsamic vinegar
1 tsp olive oil
½ c chopped basil
½ tsp salt
Step 1: Arrange the chicken breasts in a 9×13-inch baking dish.
Step 2: In a small mixing bowl, add in the garlic, oil, balsamic vinegar, Italian seasoning, and salt. Whisk until well combined.
Step 3: Pour the mixture over the chicken and toss until well coated.
Step 4: Prepare the oven and preheat to 425 degrees F.
Step 5: Allow the chicken to sit for at least 10 minutes.
Step 6: Place the chicken inside the preheated oven and bake for 25 to 30 minutes or until an instant-read thermometer reaches 165 degrees C.
Step 7: In a mixing bowl, add in all the ingredients for the Bruschetta and mix until well combined.
Step 8: Remove the chicken from the oven and sprinkle mozzarella cheese on top.
Step 9: Pour the Bruschetta on top of the chicken.
Step 10: Put the chicken back in the oven and bake for another 5 minutes or until the cheese has melted completely.
Step 11: Remove from the oven and allow it to cool at room temperature.
Step 12: Serve warm. Enjoy!
