Hello there, friends! This recipe I am sharing with you today is super easy yet a very delicious dish! You have got to bite your teeth into this luscious Buffalo Chicken! Ingredients:
6 chicken breasts, finely minced
1 red onion
1/3 c breadcrumbs
Salt & pepper
10 pieces of potato
1/2 c butter
1 bottle Frank’s Red Hot Sauce
Parsley
Ranch dressing, for garnish
Chopped celery, for garnish
Scallions, for garnish
Directions:
1. Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
2. Add the potatoes and cook until fork-tender. Drain and allow to cool.
3. Slice the cooled potatoes into thin rounds. Place them onto a pie dish. Make sure to cover the bottom completely.
4. In a mixing bowl, add the minced garlic, bread crumbs, parsley, sliced onion, salt, and pepper. Stir until well combined.
5. Place a pan on the stove and turn the heat to medium.
6. Add butter and allow it to melt.
7. Add Frank’s Red Hot Sauce and stir until well blended.
8. Pour 1/2 of the sauce over the chicken mixture. Form small balls out of the mixture.
9. Top each potato with a meatball.
10. Pour the rest of the sauce over and spread it evenly.
11. Sprinkle a generous amount of cheddar cheese on top.
12. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
13. Place it inside the preheated oven and bake for about 20 minutes or until done.
14. Remove from the oven, then pour the ranch dressing on top. Allow it to cool for a few minutes.
15. Garnish with scallions and celery.
16. Serve warm and enjoy!
