1/2 cup low-sodium soy sauce
1/3 cup extra-virgin olive oil
1/4 cup lightly packed brown sugar
1/4 cup bourbon
2 tablespoons whole-grain mustard
2 teaspoons Cajun seasoning
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
2 lb. tri-tip steak (or a very thick cut of sirloin)
2 tablespoons butter, cut into tabs
Freshly chopped parsley, for garnish (optional)
Step 1: Add the soy sauce, olive oil, mustard, Cajun seasoning, bourbon, brown sugar, red pepper flakes, thyme, and garlic into a large mixing bowl. Whisk until well mixed.
Step 2: Reserve 1/3 of the mixture for later use.
Step 3: Add the steak into the remaining sauce and toss until well coated. Allow the steak to marinate for 20 minutes to 4 hours.
Step 4: Prepare the grill and preheat to high.
Step 5: Season the steak with salt and pepper on both sides.
Step 6: Add the steak into the grill and cook for 10 minutes until the bottom turns charred.
Step 7: Turn the steak and grill the other side for 8 minutes or until done to your preference.
Step 8: Transfer the steak onto a chopping board.
To Make the Glaze:
Step 1: Place a saucepan on the stove and turn the heat to medium. Step 2: Add the reserved sauce and allow it to boil.
Step 2: Turn the heat down to medium and allow the sauce to become thick.
Step 3: Add butter and allow it to melt.
Step 4: Remove the pan from the heat.
Step 5: Generously brush the steak with the glaze.
Step 6: Sprinkle parsley on top.
Step 7: Serve and enjoy!
