Ingredients:
7 large Eggs
1 c finely shredded mozzarella cheese
3 Roma tomatoes, sliced lengthwise
salt & pepper to season
1/2 c fresh spinach leaves, roughly chopped
1/2 c half & half made need a tablespoon or so more
3 c Ore-Ida Shredded Hash Brown Potatoes thawed & drained
8-10 fresh basil leaves
4 tbsp butter, melted
Directions:
1. Prepare the oven and preheat to 225 degrees C or 450 degrees F.
2. Apply cooking spray to a pie dish.
3. Use paper towels to pat dry the shredded hash brown potatoes. Remove most of the liquid.
4. Add the potatoes and melted butter into a mixing bowl, then toss until well combined.
5. Add the butter, hash browns into the prepared pie dish, then press it to the sides and bottom.
6. Place it inside the preheated oven and bake for about 20 to 25 minutes or until it turns golden brown.
7. Remove the hash browns from the oven, then reduce the heat to 350 degrees F.
8. Add the tomato slices and arrange them around the crust.
9. Add spinach over the tomatoes. Add the basil over the spinach.
10. Add mozzarella cheese, half & half, eggs, pepper, and salt into a mixing bowl. Whisk until well blended.
11. Add the mixture on top of the crust and spread it evenly.
12. Place the quiche inside the oven and bake for about 30 to 40 minutes or until the top turns golden brown.
13. Remove from the oven and allow it to rest for a few minutes at room temperature.
14. Serve warm and enjoy!
