Make your favorite cup of coffee or juice, and serve this Carrot Apple Bread with it! It’s perfect, I’m telling you! The amazing taste of apples and carrots stands out in this bread. In just about an hour, you can enjoy this one-of-a-kind bread!
Ingredients:
3/4 c grated carrots (about 1 large peeled and trimmed carrot)
3/4 c grated apples (I used 1 medium unpeeled Fuji; try Gala, Honeycrisp, or similar)
1/4 c sour cream (lite is okay, or Greek yoghurt may be substituted)
2 tsp vanilla extract
2 tsp cinnamon
1 large Egg
1/2 tsp baking powder
1/2 tsp baking soda
1/2 c light brown sugar, packed
1/2 tsp ground nutmeg
A pinch of salt, optional, and to taste
1 c all-purpose flour
1/3 c liquid-state, coconut oil (canola or vegetable may be substituted)
1/4 c granulated sugar
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to a 9×5-inch loaf pan, then sprinkle flour on it.
3. Add egg, brown sugar, coconut oil, granulated sugar, sour cream, vanilla extract, cinnamon, and nutmeg into a mixing bowl. Whisk until well blended.
4. Add baking powder, flour, salt, and baking soda. Whisk until well incorporated.
5. Add apples and carrots, then stir until just mixed.
6. Transfer the batter to the prepared pan and spread it evenly.
7. Place it inside the preheated and bake for about 45 to 52 minutes or until a toothpick comes out clean after inserting it in the middle.
8. Remove the bread from the oven and let it sit at room temperature for about 15 minutes.
9. Slice the bread into even servings.
10. Serve warm and enjoy!
