What an awesome soup! I have never tried this one before and I am so glad that I did today. The flavor and aroma of this particular soup recipe are awesome. If you are having a bad day, this will surely cheer you up! This is perfect with toasted garlic bread. If you happen to have all the ingredients to this recipe, all you need to do is to follow all the steps and you are in for a treat! Lunch or dinner is gonna be awesome with this soup. Serve it with a nice cut of steak and some wine, oh boy, it’s perfect! Enjoy!
1 medium head cauliflower, broken into florets
1 medium carrot, shredded
1/4 cup chopped celery
2-1/2 cups water
2 teaspoons chicken or 1 vegetable bouillon cube
3 tablespoons butter
3 tablespoons all-purpose flour
3/4 teaspoon salt
1/8 teaspoon pepper
2 cups 2% milk
1 cup (4 ounces) shredded cheddar cheese
1/2 to 1 teaspoon of hot pepper sauce, optional
HOW TO MAKE CAULIFLOWER SOUP
Step 1: Add cauliflower, celery, carrot, bouillon, and water in a large pot.
Step 2: Place the pot on the stove and turn the heat to high. Bring the mixture to a boil.
Step 3: Turn the heat to low and allow it to simmer for 12 to 15 minutes covered or until the vegetables are cooked and tender.
Step 4: Remove the pot from the stove.
Step 5: Place a large saucepan on the stove and turn the heat to medium.
Step 6: Put the butter and allow it to melt.
Step 7: Add the flour and stir until smooth. Season with salt and pepper to taste.
Step 8: Add milk a little at a time then bring it to a boil. Cook while stirring for 2 minutes until it becomes thick.
Step 9: Turn the heat to low and add in the cheese. Stir until the cheese is completely melted.
Step 10: Remove the saucepan from the stove.
Step 11: Serve and enjoy!
Yield: 8 servings (about 2 quarts).
