This is an easy recipe with juicy chicken, melty mozzarella cheese, and layers of scrumptious caramelized mushrooms. For a restaurant-quality meal, serve this over rice, pasta, or zucchini noodles with a big green salad on the side.
INGREDIENTS
2 tbsp olive oil, divided
1 tbsp butter, divided
MUSHROOMS:
1 large yellow onion, thinly sliced
8 oz. sliced button mushrooms
3 cloves garlic, minced
salt and fresh ground black pepper, to taste
CHICKEN BREASTS:
1 tsp Italian Seasoning
4 (1 lb. total) boneless, skinless chicken breasts (pound to 1/4-inch thickness)
½ tsp garlic powder
½ c. low sodium chicken broth
½ tsp smoked or sweet paprika
4 oz. shredded part-skim mozzarella cheese
chopped fresh parsley, for garnish
salt and fresh ground black pepper, to taste
How to make Cheesy Baked Chicken with Mushrooms
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using cooking spray, lightly grease a 9 x 13-inch baking dish. Set aside.
Step 2: Heat half tbsp each of butter and olive oil in a large skillet over medium-high heat. Then, toss in the sliced mushrooms along with the sliced onions. Sprinkle with salt and pepper. Cook for about 5 minutes, stirring often. Next, add the garlic and continue to cook for another 20 seconds until aromatic.
Step 3: To the prepared baking dish, transfer half of the mushroom mixture and set the other half aside.
Step 4: Place the skillet back on the stove and add the remaining butter and olive oil.
Step 5: With salt, pepper, garlic powder, paprika, and Italian Seasoning, season the chicken breasts.
Step 6: To the hot oil, add the chicken breasts (in batches to prevent overcrowding the pan) and sear for about 2 minutes on each side until lightly browned. Take the chicken breasts out of the pan when done and place over the mushrooms in the baking dish.
Step 7: To the stove, return the skillet and pour in the broth. Deglaze the pan, scraping the browned bits from the bottom. Bring this to a boil and cook for about 4 to 5 minutes or until the liquid has reduced.
Step 8: In the meantime, place the remaining mushroom mixture on top of the chicken followed by the cheese. Then, pour over the prepared chicken broth.
Step 9: Place in the preheated oven and bake for about 15 minutes, uncovered, or until the chicken is completely cooked.
Step 10: Serve the Cheesy Baked Chicken with Mushrooms immediately, garnished with some fresh parsley. Enjoy!
NOTES:
I love using small button mushrooms or baby Bella mushrooms. Feel free to use whatever you have on hand, including canned ones as long as they are smaller and thinly sliced.
For this recipe, use boneless, skinless chicken breasts. For even cooking, pound them to an even thickness.
You are welcome to use any shredded melting cheese in place of mozzarella cheese.
TO STORE THE LEFTOVERS:
