Ingredients:
1 tbsp oil
1 Egg
2 c of corn
1/4 c all-purpose flour
1/4 c cornmeal
1 green onion (chopped)
1 tsp smoked paprika
1 tbsp lime juice
1/2 c grated Parmesan, or cheese of your choice
Salt and fresh cracked pepper, to taste
Sour or heavy cream, for garnish
1 handful cilantro (chopped)
Directions:
1. In a large mixing bowl, add the egg, corn, flour, green onion, Parmesan cheese, lime juice, and cilantro. Stir until well combined. Make sure to add a bit of water if the texture of the mixture is too dry.
2. Place a pan on the stove and turn the heat to medium.
3. Add 1 tbsp of oil and allow it to become hot.
4. Drop a spoonful of the mixture into the hot oil at a time. Use a spatula to flatten it out. Cook for about 4 minutes on each side or until it turns golden brown.
5. Remove from the pan onto a clean plate. Repeat the process with the rest of the batter.
6. Add a dollop of cream over the fritters.
7. Serve and enjoy!
