This Cheesy Fiesta Corn Casserole will surely make your day extra special! I will never get tired of recommending this awesome recipe to my friends because it is simply the best! You can serve this pretty much any time of the day! What I love the most about this dish is the rich corn flavour. I am sure that once you get a bite of it, you will love it as well! Ingredients:
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 tablespoons all-purpose flour
1/2 teaspoon black pepper
3/4 cup milk
4 ounces cream cheese softened
2/3 cup sliced green onion, divided
1 teaspoon hot sauce
2 (15.25 ounces) cans whole kernel corn, well-drained
2 (15.25 ounces) cans whole kernel Mexicorn or Fiesta Corn with red & green peppers, drained
1/2 tablespoon to 1 tablespoon of chopped pickled jalapeno {about 4 to 6 slices}
chopped fresh cilantro for garnish {optional}
Directions:
1. In a mixing bowl, add flour, shredded cheeses, and pepper. Whisk until well combined.
2. In another mixing bowl, add cream cheese, milk, hot sauce, chopped jalapenos, and 1/3 cup of green onions. Stir until well mixed.
3. Transfer the mixture into a 9×13-inch baking dish and spread it evenly.
4. Add the cheese mixture and corn. Stir until well blended.
5. Cover the baking dish.
6. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
7. Place the casserole inside the preheated oven and bake for about 30 minutes.
8. Remove the cover and sprinkle the green onions on top.
9. Put it back inside the oven and bake for another 5 minutes.
10. Remove from the oven and garnish with cilantro. Allow it to cool completely at room temperature.
11. Serve and enjoy!
