1 medium spaghetti squash (approx. 2-3 pounds)
2.5 tablespoons minced garlic
1 teaspoon avocado oil or olive oil
5 ounces fresh spinach chopped
1/2 c heavy cream
1 tablespoon cream cheese (optional but delicious!)
1/2 c freshly grated parmesan cheese plus extra for topping
salt and pepper to taste
grated or sliced mozzarella for topping to taste
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Cut the spaghetti squash into two and remove the seeds.
Step 3: Poke small holes on the squash and put it inside the microwave. Cook for about 3 to 5 minutes.
Step 4: Rub with a little olive oil all over the squash.
Step 5: Put the squash on a rimmed baking dish.
Step 6: Place it inside the preheated oven and roast for about 40 minutes or until fork-tender.
Step 7: Place a skillet on the stove and turn the heat to medium-high.
Step 8: Add olive oil and allow it to become hot.
Step 9: Add the garlic and sauté for a minute until aromatic.
Step 10: Add the spinach and cook until wilted.
Step 11: Add the cream, Parmesan cheese, cream cheese, salt, and pepper. Stir until well combined.
Step 12: Remove the skillet from the heat.
Step 13: Remove the squash from the oven and let it sit at room temperature to cool.
Step 14: Pour the sauce on top of the squash. Stir until well combined.
Step 15: Add more Parmesan cheese and mozzarella on top.
Step 16: Put it inside the oven and bake for 20 minutes or until done.
Step 17: Serve and enjoy!
