These homemade quesadillas will make your day extra special! The rich, cheesy flavor of these heavenly treats is so good! A total crowd pleaser and ready in just 35 minutes. Enjoy!
Ingredients:
2 tablespoons Olive Oil, or as needed
6 8-inch Flour Tortillas
Beef
1 teaspoon each: Garlic Powder, Oregano, Salt
1/2 teaspoon each: Onion Powder, Cayenne Pepper, Cornstarch/Cornflour
1/4 teaspoon Black Pepper
Olive Oil, as needed
1 heaped tbsp Tomato Puree (Tomato Paste in the US)
2 teaspoons each: Paprika, Cumin
1/2 c / 125ml Water or Low Sodium Beef Stock
1 pound / 500g Lean Ground Beef
Directions:
1. Add 1 tsp garlic powder, 2 tsp paprika, 1/4 tsp black pepper, 1 tsp garlic powder, 1 tsp salt, 1 tsp oregano, 1/2 tsp cayenne pepper, and 1/2 tsp onion powder into a mixing bowl. Whisk until well mixed. Set aside.
2. Place a pan on the stove and turn the heat to medium.
3. Add a bit of olive oil and allow it to become hot.
4. Add the red pepper and onion, then sauté for a few minutes until soft.
5. Add the beef, then cook until crumbly and brown. Add the spices and stir until well blended.
6. Add 1 tablespoon tomato paste, then cook for a few minutes to remove the raw taste.
7. Add 1/2 cup of beef broth, then scrape the bottom of the pan to get the browned bits. Stir everything until well blended.
8. Add slurry and stir until well mixed. Simmer for 5 minutes or until the texture of the sauce becomes thick.
9. Remove from the heat and transfer everything into a large mixing bowl. Let it rest for a couple of minutes.
10. Use paper towels to wipe clean the pan.
11. Place on the stove and turn the heat to medium.
12. Add a greased tortilla wrap.
13. Sprinkle 1/4 cup of cheese and 1/2 cup of the beef mixture. Fold the tortilla and cook for a few minutes, then flip to cook the other side. Repeat the process with the rest of the ingredients.
14. Serve and enjoy!
Notes:
Feel free to add jalapenos if you wish.
I suggest you use lean beef for this recipe.
