Ingredients:
2 tablespoons finely chopped onion
1 pound bulk mild breakfast sausage
16 ounces shredded frozen hash brown potatoes (thawed)
SAUCE
3 tablespoons flour
2 c milk
4 ounces Velveeta cubed
1/2 c chicken stock/broth
3 tablespoons butter
2 tablespoons Panko bread crumbs
Salt and pepper
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray in a 1-quart baking dish.
3. Place a large skillet on the stove and turn the heat to medium.
4. Add the sausage and onion, then cook until crumbly, brown, and soft. Discard any excess grease.
5. Transfer the meat mixture into a mixing bowl.
6. Add the shredded potatoes into the same bowl with the meat mixture. Stir until well mixed.
7. In the same skillet, add butter and allow it to melt.
8. Add the flour, then whisk and cook for about a minute.
9. Add the chicken stock and milk, and whisk until well blended. Allow the sauce to become thick.
10. Turn the heat down to low, then add the Velveeta and stir until melted completely.
11. Pour the sauce on top of the meat and potato mixture. Stir everything until well mixed.
12. Transfer the mixture into the prepared baking pan and spread it evenly.
13. Sprinkle Panko crumbs over the casserole.
14. Place it inside the preheated oven and bake for about 45 minutes to 1 hour.
15. Remove from the oven and allow it to rest for a few minutes at room temperature.
16. Serve warm and enjoy!
Notes:
You can use 1 cup of cheddar cheese instead of Velveeta.
Make sure to be careful of adding salt.
