Ingredients:
1 onion, sliced into rings
1½ c shredded Cheddar cheese
2 c whole milk
4 russet potatoes, sliced into 1/4-inch slices
½ tsp kosher salt
salt and pepper to taste
3 tbsp all-purpose flour
salt and pepper to taste
3 tbsp butter
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Add melted butter to an 8×8-inch casserole dish and spread it evenly.
3. Lay the onions and potatoes into the prepared baking dish and arrange them in a single layer.
4. Sprinkle salt and pepper over the potatoes and onions to season.
5. Put a saucepan on the stove and turn the heat to medium.
6. Add butter and allow it to melt.
7. Add the flour and salt, then whisk and cook for about a minute to remove the raw taste.
8. Add the milk and stir until well blended. Simmer for a few minutes until the texture of the mixture becomes thick.
9. Add the cheese and stir until well blended. Allow it to melt.
10. Pour the cheese mixture on top of the potatoes and onions. Spread it evenly until well coated.
11. Cover the entire baking dish with foil. Tuck in the sides.
12. Place it inside the preheated oven and bake for about 1 1/2 hours or until done.
13. Remove the cover, then broil for another 5 minutes or until the top turns brown and crispy.
14. Remove from the oven and let it rest for a few minutes at room temperature.
15. Serve and enjoy!
