Ingredients:
For the Soup
4 tbsp salted butter
4 carrots cut in half lengthwise and then diced
4 celery stalks diced
3 to 4 c rotisserie chicken shredded (or 2 large chicken breasts cooked and shredded)
4 tbsp Better than Bouillon Chicken
8 c water
2 small yellow onions diced finely
½ c flour
1 tsp Italian seasoning
1 c milk
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
For the Dumplings
1 tsp garlic powder
2/3 c milk
1 tsp Italian seasoning
2 c Bisquick
1 tsp salt
Directions:
To Make the Soup:
1. Add bouillon and water into a heat-proof bowl. Place it inside the microwave, then heat for about 3 minutes.
2. Remove from the microwave and stir until well blended.
3. Place a large stockpot on the stove and turn the heat to medium.
4. Add 4 tablespoons of butter and allow it to melt.
5. Add the onion, celery, and carrots. Sauté for about 10 minutes until soft.
6. Sprinkle about 1/2 cup of flour, then stir and cook for a minute.
7. Pour in the chicken broth and stir until well blended. Allow the mixture to boil.
8. Add the Italian seasoning, garlic powder, milk, shredded cheese, and salt. Stir until well mixed.
9. Reduce the heat down to low, then simmer for a couple of minutes.
To Make the Dumplings:
1. Add the seasonings and Bisquick into a mixing bowl. Toss until well combined.
2. Drizzle milk over the Bisquick and stir until just combined. Let it sit for about 2 minutes.
3. Scoop the batter and drop each into the chicken mixture.
4. Cover the pot and simmer everything for about 15 minutes on a low setting.
5. Flip the dumplings and cook for another 2 minutes.
6. Serve hot and enjoy!
Note:
Sprinkle freshly chopped parsley on top of each serving.
