Ingredients:
16 ounces baby Dutch potatoes, halved*
1 tbsp Italian seasoning
6 bone-in, skin-on chicken thighs
3 c baby spinach, roughly chopped
2 tbsp chopped fresh parsley leaves
3 tbsp unsalted butter, divided
Kosher salt and freshly ground black pepper, to taste
FOR THE GARLIC PARMESAN CREAM SAUCE
2 tbsp all-purpose flour
1 c chicken broth, or more, as needed
1/4 c unsalted butter
4 cloves garlic, minced
1 tsp dried thyme
1/2 c freshly grated Parmesan
1/2 c half and half*
1/2 tsp dried basil
Kosher salt and freshly ground black pepper, to taste
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Rub Italian seasoning, salt, and pepper all over the chicken.
Place a large skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of butter and allow it to melt.
Lay the chicken skin-side down. Sear each side for 3 minutes or until they turn golden brown. Remove from the skillet onto a clean plate.
In the same skillet, add the rest of the butter and allow it to melt.
Add the spinach and cook until soft. Remove from the skillet.
For the Garlic Parmesan Cream Sauce:
In the same skillet, add butter and allow it to melt again.
Add the garlic and sauté until aromatic.
Add flour and whisk until well mixed. Cook for a minute or until it turns brown.
Add chicken broth, basil, and thyme. Whisk and cook for 2 minutes.
Add Parmesan cheese and half & half. Stir until well mixed and thick. Add more milk if the texture is too thick. Sprinkle salt and pepper to season.
Arrange the chicken into the greased baking dish.
Scatter the potatoes and spinach over the chicken.
Spread the cream sauce over the chicken and veggies.
Place it inside the preheated oven and bake for about 30 minutes or until done.
Garnish with freshly chopped parsley.
