8 thin slices of ham
8 ounces Swiss cheese sliced or shredded
4 boneless skinless chicken breasts, about 2 pounds
salt and pepper
3 c corn flakes cereal, crushed (or substitute breadcrumbs)
6 Tbsp butter, melted
For the Sauce:
1 c mayonnaise
1-2 tsp yellow mustard, to taste
Step 1: Use paper towels to pat dry the chicken.
Step 2: Slice each chicken breast into two horizontally.
Step 3: Arrange the sliced chicken breasts into two plastic wraps, then pound them until thin with a meat mallet.
Step 4: Put a slice of ham over each chicken breast and sprinkle a generous amount of cheese.
Step 5: Roll each chicken breast and tuck the sides, then place them in a plastic wrap.
Step 6: Tightly wrap the chicken to make a tootsie-roll shape, then twist.
Step 7: Place them inside the fridge to chill for 30 minutes or overnight.
Step 8: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 9: Unwrap the chicken and sprinkle salt and pepper for additional flavours.
Step 10: Pulse the cornflakes in a food processer until fine.
Step 11: Place the crumbs on a pie plate.
Step 12: In a shallow dish, add the butter, then place it inside the microwave to melt.
Step 13: Dip each chicken into the melted butter, then into the crumbs. Make sure to press each gently.
Step 14: Apply cooking spray on a baking sheet.
Step 15: Arrange the chicken onto the prepared baking sheet.
Step 16: Place the baking sheet in the middle of the oven rack and bake for about 30 minutes or until done.
Step 17: Meanwhile, in a small mixing bowl, add the mustard and mayonnaise. Stir until well mixed.
Step 18: Remove the cordon bleu from the oven.
Step 19: Serve with the sauce on the side. Enjoy!
