Ingredients:
10 small soft flour tortillas (you can use corn but I like flour with chicken)
3 tbsp flour
2 c chicken broth
1 c sour cream
2 1/2 c shredded and cooked chicken (we like to use rotisserie chicken)
3 c Monterey Jack cheese – shredded
3 tbsp butter
4 ounces can dice green chilis (I like medium – they are not spicy at all)
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a mixing bowl, add 1 cup of cheese and shredded chicken. Stir until well mixed.
Step 3: Fill each tortilla with the chicken-cheese mixture, then roll it.
Step 4: Apply cooking spray in a 9×13-inch baking pan.
Step 5: Arrange the tortillas onto the prepared pan.
Step 6: Place a pan on the stove and turn the heat to medium.
Step 7: Add butter and allow it to melt.
Step 8: Add flour and stir until well mixed. Cook for about a minute.
Step 9: Add broth and whisk until well blended.
Step 10: Cook everything until the texture becomes thick.
Step 11: Remove the pan from the heat, then add chilis and sour cream. Stir until well combined.
Step 12: Spread the mixture on top of the enchiladas together with the rest of the cheese.
Step 13: Place it inside the preheated oven and bake for 20 minutes.
Step 14: Broil for 3 more minutes or until the cheese has turned brown.
Step 15: Remove from the oven and allow it to cool at room temperature.
Step 16: Serve warm and enjoy!
