Ingredients:
8 oz (225 g) chicken thighs, cut into 1/2” (1 cm) pieces (or chicken breast)
Marinade:
2 tsp Shaoxing Wine (or dry sherry)
1 tsp cornstarch
1/4 tsp salt
Sauce:
1/2 tsp sugar
1 tbsp oyster sauce
1/4 tsp white pepper (or black pepper)
2 tbsp soy sauce
Rice:
4 green onions, chopped (or 1/2 small onion, diced)
3 Eggs, beaten
1 c frozen mixed vegetables
4 c day-old cold rice
3 tbsp peanut oil
Directions:
1. Add all the ingredients for the marinade into a mixing bowl. Stir until well blended.
2. Add the chicken and toss until well coated.
3. Add all the ingredients to the sauce, then stir until well blended.
4. Place a large skillet on the stove and turn the heat high.
5. Add 1 tbsp of oil and allow it to become hot.
6. Add the chicken into the skillet and arrange them in a single layer.
7. Cook each side for about 2 minutes or until they turn golden brown.
8. Remove the chicken from the skillet onto a clean plate.
9. In the same skillet, add 2 tbsp of oil and allow it to become hot.
10. Add the green onions, then sauté until soft and aromatic.
11. Add rice and stir until just mixed. Turn the heat down to medium-high.
12. Cook the rice for about 5 minutes or until just crisp.
13. Add the sauce and stir until the rice is well coated.
14. Push the rice to one side of the skillet, then add 1/2 tbsp of oil to the other side.
15. Add the frozen veggies, then stir and cook for about a minute or two. Push them to the side with the rice.
16. Add another 1/2 tbsp of oil and allow it to become hot.
17. Add the beaten eggs, then scramble. Stir everything until well combined.
18. Put the cooked chicken back to the skillet, then stir until well combined.
19. Serve immediately and enjoy!
