Ingredients:
1 tbsp butter or use vegetable oil
2 pounds bone-in chicken pieces I used thighs for this recipe, skin on
Salt and black pepper to taste
1 large onion chopped
1 red bell pepper chopped
1 jalapeno pepper chopped (optional, for more spice factor)
3 cloves garlic chopped
3 tbsp sweet paprika
1 tsp hot paprika or use cayenne powder
15 ounce can tomatoes use crushed tomatoes or fire-roasted tomatoes, or you can use fresh, chopped
1/2 c sour cream room temperature – or use crema, yoghurt, quark, or heavy cream
FOR SERVING:
Spicy chilli flakes fresh chopped parsley
Directions:
1. Place a large pan on the stove and turn the heat to medium.
2. Add butter and allow it to melt.
3. Use paper towels to pat dry the chicken thighs, then season with salt and pepper.
4. Add the chicken thighs into the hot skillet, then sear each side for about 5 minutes or until they turn brown.
5. Remove the chicken thighs from the skillet onto a clean plate.
6. Leave about 1 tbsp of the grease and discard the rest.
7. Add the peppers and onion. Sauté until soft.
8. Add garlic, hot paprika, paprika, salt, and pepper. Sauté until aromatic.
9. Add the tomato and stir until well mixed.
10. Put the chicken thighs back to the skillet, then cover it with a lid. Simmer for about 25 minutes or until done.
11. Remove the skillet from the heat.
12. Remove the chicken thighs, then add the sour cream into the skillet. Stir until well blended. Add more seasonings if needed.
13. Put the chicken thighs back to the skillet and spoon the delicious sauce on top.
14. Serve and enjoy!
