Ingredients:
¾ lb rigatoni pasta
32 ounces marinara sauce
3 c mozzarella cheese, shredded & separated
1/3 c Parmesan cheese, finely grated
2 small boneless skinless chicken breasts
¾ c flour
2 tsp seasoned salt
1/4 tsp pepper
2 Eggs
1 ½ c Italian breadcrumbs
¾ c vegetable oil
2 tbsp butter
Fresh Parsley, to garnish
Directions:
To Prepare the Pasta:
Step 1: Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Step 2: Put the pasta back into the pot. Add the sauce, 1 cup of mozzarella cheese, and 1/3 of Parmesan cheese. Toss until the
pasta is well coated with sauce and cheeses.
To Prepare the Chicken:
Step 1: Use paper towels to pat dry the chicken breasts, then slice them into small cuts.
Step 2: In a mixing bowl, add the flour, salt, and pepper.
Step 3: In another mixing bowl, add the eggs. Whisk until creamy.
Step 4: In another mixing bowl, add 1 1/2 cups of breadcrumbs.
Step 5: Dip each chicken slice into the flour, eggs, then into the breadcrumbs. Repeat this process to the rest of the chicken slices.
Step 6: Place a pan on the stove and turn the heat to medium-high.
Step 7: Add butter and 1/4-inch of oil, then allow them to become hot.
Step 8: Add the chicken strips and cook for 4 minutes on each side or until golden brown.
Step 9: Remove the cooked chicken strips from the pan to a clean plate lined with paper towels, then slice them into smaller cuts.
To Assemble:
Step 1: Prepare the oven and preheat to 375 degrees F.
Step 2: Apply cooking spray in a 9×13-inch casserole dish.
Step 3: Put 1/2 of the rigatoni mixture on the bottom.
Step 4: Place 1/2 of the chicken pieces over the rigatoni.
Step 5: Top everything with a generous amount of cheeses. Repeat this process until everything is arranged in layers.
Step 6: Place the baking dish inside the preheated oven and bake for 25 minutes or until done.
Step 7: Remove from the oven and sprinkle parsley on top.
Step 8: Serve and enjoy!
