Ingredients:
¾ lb rigatoni pasta
32 ounces marinara sauce
3 cups mozzarella cheese, shredded & separated
1/3 c Parmesan cheese, finely grated
2 small boneless skinless chicken breasts
¾ c flour
2 tsp seasoned salt
1/4 tsp pepper
2 Eggs
1 ½ c Italian breadcrumbs
¾ c vegetable oil
2 tbsp butter
Fresh Parsley, to garnish
Directions:
For the Pasta:
Step 1: Place a pot with salted water on the stove and turn the heat to high.
Step 2: Add the rigatoni pasta and cook for about a minute or until firm to bite.
Step 3: Drain and rinse with cold water, then put them back into the same pot.
Step 4: Add the sauce, 1 cup of mozzarella cheese, and Parmesan cheese. Toss until well combined.
To Prepare the Chicken:
Step 1: Use paper towels to pat dry the chicken, then slice them into small cuts.
Step 2: In a mixing bowl, add the flour, salt, and pepper.
Step 3: In another mixing bowl, add the eggs and whisk until creamy.
Step 4: In another mixing bowl, add 1 1/2 cups of breadcrumbs.
Step 5: Coat each chicken slice with the flour, then into the egg, and lastly into the breadcrumbs.
Step 6: Place a frying pan on the stove and turn the heat to medium.
Step 7: Add oil and butter, then allow them to become hot/melt.
Step 8: Add the coated chicken pieces and cook each side for 4 minutes or until they turn golden brown.
Step 9: Transfer the fried chicken pieces onto a clean plate lined with paper towels to drain any excess oil.
Step 10: Slice them into smaller cuts.
To Assemble and Bake:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Apply cooking spray in a 9×13-inch casserole dish.
Step 3: Add 1/2 of the pasta and sauce mixture, then add 1/2 of the sliced chicken on top.
Step 4: Sprinkle a very generous amount of mozzarella and Parmesan cheese on top.
Step 5: Repeat the process to the rest of the ingredients until everything is arranged in layers.
Step 6: Place it inside the oven and bake for 25 minutes or until done.
Step 7: Remove from the oven and garnish the casserole with parsley.
Step 8: Serve and enjoy!
