This excellently coated chicken is the best homemade chicken parmesan. An easy meal that’s ready in thirty minutes. So good, you’ll want to make this again and again!
2 large chicken breasts, boneless skinless
6 slices of provolone cheese
3 tablespoons basil, optional
3 tablespoons oil (more if needed)
1/4 c. all-purpose flour
¼ teaspoon salt
dash of pepper
2 large eggs, beaten
3 tablespoons all-purpose flour
2/3 c. Panko breadcrumbs
2/3 c. Parmesan cheese, grated
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground paprika
½ teaspoon Italian seasoning
1 tablespoon unsalted butter
1 teaspoon oil
1/2 small onion, finely chopped
2 garlic cloves, minced
14.5 ounces cubed tomatoes
1 teaspoon Italian seasoning
¼ teaspoon salt
⅛ teaspoon ground black pepper
How to make Chicken Parmesan
Step 1: Prepare the oven. Preheat it to broil.
Step 2: With parchment paper, line a baking sheet.
Homemade marinara sauce:
Step 1: Saute the onion in a tbsp butter and a tsp oil in a saucepan until cooked. Stir as needed.
Step 2: Add the garlic, tomatoes, Italian seasoning, salt, and pepper. Continue to cook for 2 to 3 minutes more.
Step 3: Using a hand-held blender, puree until smooth.
Step 4: Into the saucepan, pour back the marinara and let it simmer over low heat.
Step 1: In half lengthwise, slice the chicken breast. With a meat mallet, lightly pound the chicken to an even thickness.
Step 2: Combine the ingredients for bowl 1, bowl 2, and bowl 3 in separate bowls.
Step 3: Into bowl 1, dredge the chicken, then in bowl 2, lastly in bowl 3, making sure to coat the chicken generously.
Step 4: Heat 3 tbsp oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken carefully to the skillet. Note to not overcrowd the pan and cook the chicken in two batches if needed.
Step 5: Cook the chicken for about 2 to 3 minutes on each side until crispy and completely cooked.
Step 6: To a baking sheet, transfer the chicken breast. Top with the marinara, then cheese.
Step 7: Place in the preheated oven and broil for about 4 to 6 minutes until the cheese has melted.
Step 8: Before serving, garnish with fresh basil. Enjoy!
