Ingredients:
For the Chicken
2 tbsp salted butter
2 tbsp olive oil
1 pound Chicken breast, diced
½ tsp lemon pepper seasoning
3 tbsp flour
1 tsp Italian seasoning
Salt/Pepper, to taste
Pasta & Sauce
6 tbsp salted butter, separated
5 cloves fresh garlic, minced
8 ounces angel hair pasta
1/8 tsp red pepper flakes
½ c Parmesan Cheese, shredded from a block
¼ c roughly chopped parsley
2 tbsp lemon juice, freshly squeezed
½ c pasta water
½ c dry white wine
½ c Asiago Cheese, shredded from a block
½ c freshly diced tomatoes
Salt/Pepper
Directions:
1. Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
2. Add the pasta and cook until al dente. Drain and rinse with cold water to stop the cooking process. Set aside about 1/2 cup of the pasta water for later use.
3. Use paper towels to pat dry the chicken breast. Season all over Italian seasoning, salt, pepper, and 1/2 tsp of lemon pepper.
4. Sprinkle a bit of flour and toss until well coated.
5. Place a skillet on the stove and turn the heat to medium-high.
6. Add butter and olive oil, then allow them to become hot.
7. Add the chicken and sear each side for about 3 minutes or until golden brown.
8. Remove the chicken from the skillet onto a clean plate, then cover with foil.
9. In the same skillet, add 1 tbsp of butter and allow it to melt over medium heat.
10. Add the garlic and sauté until aromatic.
11. Pour in white wine and scrape the bottom of the skillet to get the browned bits. Simmer for about 3 minutes or until it reduces its volume.
12. Add 4 tablespoons of butter and allow it to melt. Add the chicken, parsley, and red pepper flakes. Toss until well combined.
13. Turn the heat down to low, then add another tablespoon of cold butter and swirl.
14. Add the reserved pasta water and pasta. Allow the mixture to boil.
15. Add 1/2 cup of pasta water, Asiago cheese, lemon juice, and Parmesan cheese into a large container. Shake it until everything is well mixed.
16. Transfer the pasta into the skillet as well as the remaining pasta water, then toss until well combined. Sprinkle salt and pepper to taste.
17. Serve with garlic bread. Enjoy!
