Ingredients:
3 cloves garlic, minced
2 tbsp olive oil
1 small yellow onion, diced
4 tbsp butter
1 ½ c chicken broth
10 ounces diced tomatoes & green chillies
2 small boneless skinless chicken breasts
4 ounces cream cheese softened
¾ c milk
8 ounces of Thin Spaghetti
1 c mozzarella cheese, shredded
1 c cheddar cheese, shredded
4 tbsp flour
2 tsp Italian Seasoning
Salt/Pepper
red pepper flakes & chopped parsley to garnish
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Slice into two thin pieces the chicken. Use paper towels to pat them dry, then sprinkle salt, pepper, and Italian seasoning. Rub each until well coated.
3. Place a skillet on the stove and turn the heat to medium-high.
4. Add olive oil and allow it to become hot.
5. Add the chicken pieces, then cook each side for about 5 minutes or until done.
6. Slice the chicken into small pieces.
For the Sauce:
1. In the same skillet over medium-low heat, add butter and allow it to melt. Scrape the bottom of the skillet to get the browned bits.
2. Add the onions, then sauté until translucent.
3. Add the garlic, then sauté until aromatic.
4. Add flour, then whisk and cook for about 2 minutes to remove the raw taste.
5. Add the chicken broth gradually and stir every addition until well blended.
6. Add the milk and whisk until well blended as well.
7. Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
8. Simmer the sauce over low heat, then add the softened cream cheese and stir until well blended.
9. Add cheddar cheese and stir until well mixed.
10. Add the tomatoes and chicken. Toss until well coated by the delicious sauce.
11. Add the cooked pasta and toss until well coated as well.
12. Apply cooking spray to a 9×13-inch casserole dish.
13. Transfer the mixture to the prepared casserole dish and spread it evenly.
To Bake:
1. Sprinkle a generous amount of mozzarella cheese on top.
2. Prepare the oven and preheat to 475 degrees F.
3. Place the casserole dish inside the preheated oven and bake for about 15 minutes or until done.
4. Remove the dish from the oven, then sprinkle freshly chopped parsley and red pepper flakes on top to garnish.
5. Serve with garlic bread and enjoy!
