Ingredients:
1 tbsp fresh parsley leaves chopped, plus more for garnish
2 tbsp brown sugar
1/2 c olive oil
3 tbsp soy sauce
1 tbsp fresh thyme leaves chopped
1 1/2 tsp lemon zest
2 tsp minced garlic
1 tsp salt
1/2 tsp pepper
Directions:
1. In a mixing bowl, add all the ingredients for the marinade. Whisk until well blended.
2. Add about 2 lbs. of chicken thighs into the bowl with the marinade. Toss until well coated.
3. Cover the bowl with plastic wrap, then place it inside the fridge. Marinate the chicken thighs for an hour or overnight.
4. Remove the chicken from the bowl with the marinade, then cook to your preference. Enjoy!
Note:
I love to fry the chicken until they turn brown. Serve this over rice, you have yourself a meal to remember. Enjoy!
